To enjoy Vegetable Spaghetti Squash, simply boil or bake the whole fruit until tender, then slice it lengthwise. Serve it simply seasoned or topped with your favorite pasta sauce for a nutritious and plant-based alternative to traditional pasta.

Long-Season Growing for Winter Enjoyment
Plant your Vegetable Spaghetti Squash seeds in a warm, sunny location. Direct sow or transplant in late May or early June once the soil is warm. For transplants, start seeds indoors during the first two weeks of May, ensuring they are in the ground no later than June 15th.
These vigorous vines require ample space, so provide at least 90-120cm (36-48 inches) between plants in rows 120-180cm (48-72 inches) apart. With a maturity of around 100 days from transplant, this squash will be ready for harvest in the fall.
To improve storage, wipe down mature fruits with a diluted bleach solution (1 part bleach to 10 parts water) if the skin is intact. Store in a cool (10-15ºC or 50-60ºF), low humidity environment with good air circulation for months of enjoyment.
