Growing Your Greek Oregano

Start Greek Oregano seeds indoors about two months before the last expected spring frost, sowing them just below the soil surface and maintaining a temperature of 65-70°F with at least six hours of sunlight. Keep the soil moist until seedlings emerge.

Transplant them outdoors once they are large enough to handle or after the last frost, spacing them 12-15 inches apart in a location with full sun and fairly dry soil. You can also direct sow seeds and thin seedlings to the same spacing. Pruning the tops to prevent flowering will encourage bushier growth and more tender, flavorful leaves.

Harvest fresh leaves as needed once the plant reaches six inches tall, ideally in the morning. Cut entire stalks about an inch above the ground for regrowth. Fresh leaves can be stored in the refrigerator for about five days or preserved by freezing or drying.

Remember to add oregano to hot dishes just before serving to preserve its best flavor.
