Don’t let its beauty fool you – Kale Casper (*Brassica oleracea*, Acephala Group) is not just an ornamental marvel, but also one of the tastiest, sweetest, and crispiest kales you’ll ever try! Its beautifully textured leaves feature striking snow-white veins contrasting with frilly sage-green margins.
These extraordinarily productive plants can grow up to 32 inches tall, forming billowy masses of tender leaves perfect for continuous cutting.
As the plants mature, the white color intensifies, spreading outward from the veins to saturate the center of the leaves, creating a truly stunning visual.
Direct sow seeds ¼ inch deep, spacing them 4-6 inches apart (thin to 12-24 inches). Rows should be 18-36 inches apart. Soil temperature for germination is 55–75°F, with emergence in 5–17 days. For a fall crop, sow June—July.
To transplant, start indoors 4-6 weeks prior (May—July for June—August transplant). Provide medium fertilizer needs.
Harvest leaves from the bottom up at any size; cool weather and frost enhance its flavor. Casper matures in approximately 60 days from direct seeding (subtract 15 days if transplanting).
