Unique Chinese Python Snake Bean
Introducing our new favorite vegetable, the Chinese Python Snake Bean (*Trichosanthes cucumerina*), also known as Snake Melon or Snake Gourd! This unusual gourd relative is utilized like a bean in its native China and offers a flavor many find even more delicious and tender than green beans.
The Chinese Green Python Bean variety is the largest of its kind, producing impressive, snake-like fruits that can grow up to 60 inches long and 1.5 inches thick! As they mature, the beans develop a vibrant green color and a delicate waxy coating on their skin.
Harvested when they are between 12 and 30 inches long, these versatile beans can be used in the same way as green beans or summer squash, making them perfect for stir-frying, especially with peppers and onions. Interestingly, in Africa, the inside of fully mature fruits is scraped out and used as a substitute for tomato paste.
Due to their vining nature, these plants require a sturdy trellis for support. Pinching off lateral branches below 30 inches will encourage upward climbing. The unique, snake-like appearance makes it a fun and fascinating plant, especially for children’s gardens.
