Chervil has a spicy-sweet, anise-like fragrance and taste, which is caused by a strongly aromatic, essential oil (Isoanethol). The uses in the kitchen are many. You harvest the tender, fresh leaves before flowering, but let the heart leaves stand. A treat, for example, finely chopped with spring chervil soup, with sauces, green salad, herb butter, mayonnaise, cottage cheese, tomato salad, lamb or mutton chops.
