Country Gentleman Sweet White Corn

Country gentleman sweet corn is an heirloom sweet corn with irregular kernels that was first introduced in 1891 by Peter Henderson. It’s good for roasting on a barbecue, boiled or for making a creamed soup. This heirloom corn has a much longer cooking time, but keep in mind it’s a grain, and not a vegetable like the modern sweet corn. Grind the kernels in the blender and cook like polenta. It’s a rich, balanced, old-fashioned sweet corn, and maintains its texture even with long cooking times. Plants grow to 7–8’ with two to three 7–8” ears with shoepeg kernels (non-rowed).
