This vegetable from grandmother’s time was once spread all over Germany. It attracted special attention in the fine Rhenish cuisine. The spinach-like plants grow very quickly and bring the first harvests in early April. Then the young heart-shaped leaves are particularly tender and tasty. You can cut them off with a stem and prepare them as a fresh salad or cook them like spinach leaves and serve with meat as a side dish.
